  2. Prepare the Base: In a medium saucepan, heat the remaining milk, heavy cream, sugar, and salt over medium heat until the mixture is hot but not boiling. Stir occasionally to dissolve the sugar.
  3. Temper the Eggs: In a separate bowl, whisk the egg yolks. Gradually add a ladleful of the hot milk mixture to the yolks, whisking constantly to prevent curdling. Slowly pour the tempered yolks back into the saucepan, stirring continuously.
